Buckeye cookies- YUM

It is always fun to get started making Christmas cookies.  I don't know what your traditions are, but a few years ago we added buckeye's to our Christmas cookies.  Who doesn't love chocolate and peanut butter, right?
They are easy to make and no baking required!  Awesome!  You will need (this recipe is cut in half and makes 150-200 buckeyes!)
1 16 oz jar of peanut butter (I use natural)
2 sticks of butter
24 oz of powdered sugar
12 oz package of chocolate chips (my mom prefers using dark Ghirardelli chocolate)
1/4 bar of paraffin wax

Cover some cookie sheets with waxed paper and set aside,
Cream the peanut butter and butter together until combined.

Add the powdered sugar a little at a time. Mix well.

It will look like this when you are all done with the mixer.

Roll the peanut butter mixture into 1" balls and place on the waxed paper pans.

Heat the chocolate and wax in a double broiler.

Once you are sure the wax is melted (that seems to take the longest) you are ready to dip the peanut butter balls in.  If you refrigerate your peanut butter balls a short while before you start this step, the toothpicks work a little better.


I use a toothpick. I did not let mine cool this time so a toothpick leaves a little bigger of a hole.  They were a little soft, but still taste scrumptious!
